These slowly rotate to get the most benefit from the glowing embers, and the chefs, usually in gaucho outfits, will come over from time to time to slice off portions as they are ordered by the customers.



But grilled steaks are not only a popular meal in Argentina; they also play an important role in defining the argentine identity and are an important cultural element for social interaction. Nothing -with maybe the exception of "mate"- defines friendship and belonging better as sharing an "asado" on Sunday. Meat, and especially grilled meat, is an essential ingredient of argentine culture; a source of pride and tradition that argentines love to share with tourists.
